Easy Chicken Enchiladas

Since I couldn't think of anything else to write about I decided to share a dinner recipe with all of you that my and I enjoy. The recipe is "Easy Chicken Enchiladas" from the 2004 edition of The Best of Country Cooking . 3 cups (12 ounces) shredded cheddar cheese, divided 2 cups (8 ounces) shredded Monterey Jack cheese 2 cups chopped cooked chicken 1 1/2 cups sour cream 1 can condensed cream of chicken soup, undiluted 1 can (4 ounces) chopped green chilies 2 tablespoons finely chopped onion  1/4 teaspoon pepper 1/8 teaspoon salt 10 flour tortillas In a large bowl, combine 2 cups shredded cheddar cheese, Monterey Jack cheese, chicken, sour cream, soup, chilies, onion, pepper and salt. Spoon about 1/2 cup off center on each tortilla; roll up. Place seam side down on a greased 13-in x 9-in backing dish.  Cover and bake at 350 degrees for 20 minutes. Uncover; sprinkle with remaining cheddar cheese. Bake 5 minutes longer or until cheese is melted. Let sta

The Story of My Life

Today I was going to write a post about how life isn't always awesome and that sad things happen but then I decided to change it since I didn't like how the post sounded when I had started writing it in my head. Even though the title of this post would work better for the one I am writing for Sunday I decided to use it for this post instead. In the couple days that I have been participating in the 7 posts, 7 days I have come up with several post ideas to talk about but never actually did because I didn't know what to say exactly. Since this is another random post here is a 30 minute quiz that a friend of mine shared on Facebook that will tell you which side of your brain is more dominant. The two times I took the test it said that I use the left half of my brain more than the right side. My mom said that she was left sided as well when she took the test. Everything is Awesome

For today's post I was tossing around the idea of writing a post on either laziness (inspired by a conversation that my family had the other day on the topic) or bragging. I had also decided to write a post about my family but then I changed my mind on that as well, so now I am just writing a random post instead. Last night I watched the first episode of "Psych" and it was interesting. I found this on Pinterest the other day and I thought that it was kind of funny so I decided to share it here. On Sunday the girls club that Rosy and Aaliyah are in had the family event part of the club. What the club does each year,during the school year, is the girls learn about a new country each year and usually in either January or February they invite the rest of the families to a dinner and "presentation" of what they have learned so far. Depending on the country that is being studied will depend on what the girls do. This year they have been studying the USA so the girls gave different speeches from different presidents as well as American poems and in between presentations we joined in the folk songs. It was fun. After we came home after that we watched the Closing Ceremony for the Olympics. I have to say that I liked South Korea's performance better then Russia's. Towards the beginning of the girls club event friends of ours, who we hadn't seen since March of last year, surprised us and a bunch of the other girls that they were friends with. 7 Quick Takes Friday

--- 1 --- I was going to say something about school and how it was closed for President's Day and for something on Tuesday, but I wasn't sure if it was going to sound like I was complaining. So I decided not to write it and just explain what I was originally going to write instead :) --- 2 --- This past Saturday I went ice skating for this first time in five years. I went with Amanda, Aaliyah, Yavi and Yavi's friend S. Though I wasn't moving terribly fast on the ice I still had fun. It was S's first time skating since she is from Gahna. --- 3 --- As usual we were watching the Olympics on Sunday evening and the bobsledding was really interesting to watch. Writing Wednesday

I would have done a wordless Wednesday but I haven't really taken any new pictures so I decided to do a writing Wednesday instead. In last weeks 7 Quick Takes Friday I had shared the first couple sentences of the story that I started writing as well as a revised example that a friend of mine did. So today I decided to share the revision that I made to it :) Let me know what you think of it :) While she leaned against the pole of a low-lit street lamp Xiomara sighed and looked around at the rest of the quiet street. Rubbing her hands up and down her arms she straightened up and moved into the middle of the street and started walking along the middle of the road in a random direction. Though it was a warm summer night in the middle of July, Xiomara shivered and started rubbing her arms again. When she reached the end of the street it started drizzling. Not caring about the rain Xiomara continued walking until she reached the entrance to the subdivision and the main road.

My sister Yavi had gotten this book for her birthday, since both she and Amanda had read the books and like them. Since I hadn't read it when they first checked the book out from the library I decided to read it last week. I enjoyed it more than "The Hunger Games" books.  *mini spoiler if you haven't read the book yet* The only part that annoyed me was when they use the attack simulation on Tobias/Four because it was pretty much the same thing as what was done to Peeta in "Mockingjay," thought I am glad that Veronica Roth had Tobias/Four snap out of the simulation faster *end mini spoiler* Other then that I liked it and I have holds on the second and third books, so I shall have to wait and read those, since there are multiple holds already on the books.

7 Quick Takes Friday

--- 1 --- Like everyone else in the world my family and I have been watching the Olympics. My favorite event is the Figure Skating. Though the Snowboarding is interesting as well. --- 2 --- --- 3 --- This year at the Daddy Daughter ball I only took two photos that weren't with my family or from dancing, which is kind of surprising because usually there is at least a few group photos of a bunch of the girls that are around my age and we didn't do that. I'm okay with that though. --- 4 --- In case I haven't said this already I am finished with winter and ready for spring. The only things that I like about winter is Christmas and my birthday, which is coming up in a couple weeks. I enjoy snow when it isn't coming down every single week. It hasn't actually done that, though it feels like it at times and I prefer snow when there aren't freezing temperatures thrown in as well. I apologize for my mini rant but I am tired of winter. --- 5 ---

--- 1 --- The other day I was feeling a bit bored so I made a couple covers for the story that I started working on. --- 2 --- A couple of weeks ago I was looking up pictures of the minons from "Despicable Me", don't remember why, but while I was scrolling down the page I came across this minion picture: --- 3 --- I found this on Pinterest a while back... --- 4 --- On Sunday we had to shovel snow off the driveway. It was really cold out and it made my stomach kind of hurt a little bit afterwards. The only bright side, besides being able to come inside and warm up, was getting hot chocolate. --- 5 --- Since I couldn't think of anything else to write for this one I decided to share the first couple sentences of what I have written so far of my story let me know how you like it :) Standing under the only low-lit street lamp Xiomara looked both ways at the quiet street lit only by the light of the street lamps. Daddy Daughter Ball

On Saturday the homeschool group that my family is a part of had their 12th annual Daddy-Daughter ball, despite the snow. Friday night was set up night and Aaliyah helped two other girls set up this on one of the walls: I would have taken a couple pictures of the decorations that I helped set up in the bathroom but I decided not to because it was kind of dark in there and it felt a little awkward. Besides having fun setting everything up on Friday night we had fun on Saturday. Especially since there were a couple people who came to the ball that I hadn't seen in a while.  one of the table decorations they had a craft table where any of the girls could decorate hearts and then give them to their dads after each family was introduced and had their family fun fact read they got to put a rose into one of the vases that was in front of the statue of the Blessed Mother :)
