An Unexpected Day Off = Baking
Last week during one of my many Pinterest scroll and pinning sprees I found a delicious sounding recipe for Cinnamon Oatmeal Muffins. So I printed out the recipe and thought that I wouldn't be able to make them last week. But I ended up having Thursday off of work unexpectedly so I decided to make the muffins.
Cinnamon Oatmeal Muffins Recipe:
1 egg (room temperature)
1 tbsp. coconut oil (melted)
1 cup milk (I used almond)
½ cup honey
1 cup flour*
1 cup rolled oats
½ tsp salt
½ tbsp. baking powder
2 tsps. cinnamon
Recipe Directions: Preheat oven to 400 degrees. In a large bowl add egg, honey, and melted oil. Stir until the ingredients are combined and slowly stir in milk. Add the oats to the mixture and let it rest for 1-2 minutes. Mix the dry ingredients in a small bowl and add to the mixture. Mix until dry ingredients are blended in well. Place cupcake liners in a muffin tin and add 1-2 heaping tablespoons of batter to each liner. Bake in the oven for 20-25 minutes or until a tooth pick inserted in the middle of the muffin comes out clean.

I had three of them for breakfast on Friday morning and they were pretty good, though I want to try adding a few raisins the next time I make them. Because the recipe is so easy to follow I might be making these more often.
*I used Pamela's Gluten-Free Baking and Pancake Mix for the recipe and left out the salt and baking powder because they are already in the flour.
