Pumpkin Muffins


Since it is pretty much fall now I though I would share the recipe for these delicious easy to make pumpkin muffins with you :)


  • 1 cup canned pumpkin (1 1/2 cups)
  • 3/4 cup oil (+ 1/4 cup)
  • 1 cup granulated sugar (+ 1/4 cup)
  • 2 eggs, beaten (+ 1 egg)
Mix above ingredients in a bowl.

In another bowl place:

  • 2 cups flour (+ 1 cup)
  • 1 teaspoon baking soda 
  • 1 teaspoon cinnamon (+ 1/2 teaspoon)
  • 1/2 cup raisins (+ 1/4 cup)
  • 1/4 cup walnuts
Rinse raisins and walnuts in hot water, drain add add to flour. Combine all the ingredients: mix well and fill greased muffin tins 1/2 full. Bake at 350 degrees for 20 mins, or a bit more if you like them less moist. Makes 12 large muffins.

In parentheses I added the measurements for doubling the recipe if you want to make more muffins.
