Easy Homemade Pancake Recipe


I don't remember where my sister originally found this pancake recipe, but we all love it and it is the recipe that we use on Sundays when we make pancakes for breakfast. The recipe also works well to make waffles with as well. So it is a 2-for-1 recipe and is super delicious, especially if you add blueberries or bananas to the batter. The recipe is also easy to double or triple depending on what you need it to make. Since we made waffles the other week for dinner I decided to share the recipe here!!! Especially since NaNoWriMo starts tomorrow, or it has started depending on what part of the world that you live in. And I know that people are always looking for easy meals to prep during NaNo.

Homemade Pancakes

Recipe Type: Breakfast
Serves: 8

Ingredients

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 1 cup milk
  • 2 tablespoons oil
  • 1 teaspoon vanilla

Instructions

  1. Heat skillet or griddle on medium heat.
  2. Wisk dry ingredients in a large bowl.
  3. Wisk wet ingredients in a medium bowl.
  4. Combine wet ingredients in the bowl with the dry ingredients and gently stir until well combined. (Do Not Overmix!)
  5. Pour 1/4 cup of batter onto the skillet , and cook until bubbles appear on the surface.
  6. Flip pancake with a spatula, and cook until brown on the other side.
